Ragada Patties

Tasty Ragada Patties

Ingredients for ragada:

1 cup whole green peas (vatana),
1 finely chopped onion,
2 medium sized tomatoes
garlic-ginger paste ,
1/2 tbsp tamarind paste,
1/4 tbsp garam masala powder,
1/2 tbsp chili powder,
1 tbsp coriander powder and cumin powder,
Pinch of turmeric powder,
pinch of mustard seeds,
pinch of cumin seeds,
5-6 tbsp oil
salt to taste

How to make ragada:
firstly soak the green dried peas overnight,drain the water next day.
pressure cook peas by adding salt to taste with 3-4 cups of water
Heat oil in a pan,add mustard,cumin and curry leaves.then add ginger garlic paste.
then add chopped onion and fry till little brown colour.then add chopped tomatoes.
Now add cooked peas then add tuemeric,chilli powder,garam masala ,coriander-cumin powder.
mix it well and bring it to boil till desired consistency
And now your ragada is ready :) .

Ingredients for patties:

4-5 boiled potatoes,
1/4 tbsp red chili powder,
oil for shallow frying,
1/2 cup semolina (Rava)
1/2 tbsp coriander-cumin seed powder,
some chopped green coriander-for good taste (optional)
salt to taste.

How to make patties:
Mash boiled potatoes and add salt,chilli powder,coriander-cumin powder,chopped coriander.
mix it well.
dip patties in semolina.
Heat the tava with oil allover.
Shallow fry them on Tava ot in a pan till golden brown and crisp.
And now your patties are ready.

For Green chutney,- 1 cup of coriander leaves, 5-6 mint leaves, 3 green chilies chopped, salt to taste.

For Sweet chutney- 1/3 cup jaggery, 3 tbsp tamarind paste,
salt to taste

For garnishing- Finely chopped onion, chopped coriander, smooth yoghurt,finely chopped tomatoes (optional)

How to serve ragda patties:

* Place 2 patties in a serving dish and pour ragda on the top.
* Add sweet and green (spicy) chutneys,yoghurt according to your taste and add onion.If you want you can add chopped tomatoes also.then on top garnish with coriander,sev.

Shrikhand

What you need:
For two persons
1/2 liter Curd (Preferably with 3.8 % fat)
Sugar 200gm
Dry fruits : Almonds, Cashews etc. for decoration
Two pinch Cardamom powder

Preparation:
First you need to remove water from the curd. Wrap curd in a clean cloth and hang it with a string from a bar. Immediately water starts coming out of the cloth. You need to keep it for 6 - 7 hrs. Better you can put it hanging over the night so that in the morning only the cream remains in the cloth.

Once all the water is removed from the curd put it in the refrigerator for 30 min. After this add sugar and cardamom powder and stir well so that it mixes well with the cream. Add dry fruits and put it again in the refrigerator. Thats it! Your Shrikhad is ready. Take it out when you want to serve it :-)
